In the day, they are nice child-friendly toys. But, when it turns night their inner kid soul wanting revenge wants to get revenge for the purple person who had killed them. So, I guess this basically means that you, the nightguard have the worst job ever in history. Good luck with that.

"My replacement is blue" That means Toy Bonnie. Toy Bonnie, in the only game he shows up (maybe) is blue. The "its got the latest tech too"part states in a phone call (idk which night) phone guy explains how the animatronics have facial scanners to protect the kids.

You know sometimes in the first game if you dont look at Foxy's Pirate Cove he will become "mad" and come to you. I think the part where he becomes "mad" is the part where MandoPony states "sends me in a craze". The "But when you look away from my display" is when you just put down your camera or look at someone else like: Bonnie.

I think it means when you play the game if you hear breathing and flash the flashlight at the animatronic, the animatronic will kill/jump scare you (well you know in the west and the east hallways). When the animatronics jump scare/ kill you they open and close their mouth maybe that's the part "I will bite you". Either that or its referencing to the (maybe not too sure) bite of '87 when the kid you're (maybe) playing as gets bitten in a mini game.
