I think there's two meanings of this song. He could be singing about the love of his life, and saying that she is 'love' when no other adjectives seem to fit.
He could also be singing about a best friend who is his rock. She is compassionate and loving and always there, even when his other relationships fail (which lets face it, many do). He goes to her with everything and loves her and cherishes those qualities.
