I think she is saying that she fell too deep in love and it didn't work out so she wishes he was the one who got away. As in they never should have developed a relationship so she would feel this pain. She wishes she could say he was the one she saw but he got away. Instead she fell deep in love. Now he's gone and she misses the way he use to look at her.
